specification bang on, with the 6" 
and 8" being my personal favourites 
for snapper up to 50cm. They are 
light and manoeuvrable with very 
stylish handles, I have used either 
Olive wood, or hand polished, 
stabilised coloured maple wood, 
also with G10 grips and all come 
with brass or stainless tang pins and 
Mosaic brass and stainless inserts.
The larger 10" blade has a 
stainless bolster with Olive 
wood grips, this knife is best for 
handling kingies and big snapper, 
and the shape of the blade is 
quite unique as the blade edge 
is well forward of the handle, 
making it easy to get a good 
clean stroke. This was a design 
I had seen used in Canada for 
large halibut and thought big fish 
required a blade shaped like that.
Tuna was another one I have 
included in the range.  Traditional in 
the Japanese and Taiwanese tuna 
markets, this knife or chopper is a 
circ-blade, which is heavy with 8" 
blade length and is paper cutting 
sharp to deal with fins, bones and 
flesh. As in Japan these speciality 
knives are made from high carbon 
spring steel with a round handle, 
held on with a bent over spike tang 
and it will rust if not cleaned and 
dried after use. Don't miss when 
swinging it or you may lose a limb!
Sashimi knives with long blades, 
razor sharp and high-grade 
Japanese style handles, we have 
put together a small selection on 
double edged and right-handed 
single edge blades, 270mm blade 
length and 300mm blade lengths.
We also have hunting knives 
for boning, skinning and a drop 
point but will talk more about 
these in the next issue.

sharp to deal with fins, bones and flesh. 
This 8” knife is made from high carbon 
spring steel with a round handle.
Testing the knives they are super sharp 
and a joy to fillet with.  Graeme will also
